Pennies from Heaven
Creating and sharing old southern recipes is a beautiful way to connect with family history and community traditions. One delightful recipe that has been passed down through generations, and holds a special place in my heart, is called "Pennies from Heaven." This unique name was given by a lovely lady from our church who shared the recipe with me, and it's been a favorite ever since. These delectable treats are essentially little cheese biscuits, perfect for serving as finger food or an appetizer.
Ingredients:
2 cups sharp cheddar cheese, grated
2 sticks margarine, softened at room temperature (ensure it's really soft for the best texture)
2 cups plain flour
2 cups Rice Krispies Cereal
1/4 teaspoon cayenne pepper** (for a subtle kick)
1/2 teaspoon salt
Directions
1. Cream Cheese and Margarine: Start by creaming the grated cheddar cheese and softened margarine together in a bowl until smooth and well combined.
2. Prepare Dry Mixture: In a separate bowl, sift together the flour, salt, and cayenne pepper. This ensures even distribution of the dry ingredients.
3. Combine Ingredients: Gradually add the dry mixture to the cheese and margarine blend. Stir until everything is well incorporated.
4. Add Crunch: Gently fold in the Rice Krispies cereal. This will add a delightful crunch to your biscuits.
5. Form and Flatten: Roll the mixture into balls about the size of large marbles. Place them on a baking sheet, and use a fork to flatten each ball slightly.
6. Bake: Preheat your oven to 375°F (190°C). Bake the biscuits for 10-12 minutes, or until they turn a light golden brown.
These Pennies from Heaven are sure to be a hit at any gathering, bringing a taste of southern tradition and warmth to your table. Enjoy sharing these with family and friends, and carry forward the rich culinary heritage of your community.
