Classic Southern Cheese Ball Recipe

Ingredients:

- 2 (8 oz.) packages cream cheese

- 1 small can pineapple, chopped and drained

- 2-3 tablespoons onion, chopped

- 1/3 cup green or red sweet pepper, chopped

- 1 teaspoon salt

- 1/2 to 1 cup pecans, chopped


Directions:


1. Prepare Pineapple: Begin by thoroughly pressing all the juice out of the chopped pineapple. This step is crucial to ensure that the cheese ball maintains the right consistency and isn't too watery.


2. Mix Ingredients: In a large mixing bowl, combine the cream cheese, drained pineapple, chopped onion, sweet pepper, and salt. Mix these ingredients thoroughly until they are well combined and the flavors are evenly distributed.


3. Form the Cheese Ball: Once the mixture is ready, form it into a ball. You can use your hands to shape it, or if you prefer, you can use a mold for a more uniform shape.


4. Roll in Pecans: Spread the chopped pecans on a flat surface or a plate. Roll the cheese ball in the pecans until it is fully coated. The pecans not only add texture but also a rich, nutty flavor that complements the other ingredients beautifully.


5. Chill and Serve: Place the cheese ball in the refrigerator to chill for at least an hour before serving. This allows the flavors to meld together and the cheese to firm up slightly.
