Spicy Sausage and Potatoes in a Skillet

This delightful dish combines my husband's favorite trio of flavors: spicy sausage, peppers, and potatoes. It's a simple yet satisfying meal that brings warmth and comfort to your table.



Ingredients


  • 1 1/2 lbs. spicy Italian sausage links, cut into 1" pieces

  • 10-15 mini red potatoes, halved or quartered

  • 1/2 tsp pepper

  • 1/2 tsp thyme leaves

  • 1 small red onion, cut into large pieces

  • 1 green pepper, cut into 1" pieces


Directions


1. Combine Ingredients - In a large skillet, combine the sausage pieces, halved or quartered mini red potatoes, pepper, and thyme leaves.


2. Initial Cooking - Cook the mixture over medium to high heat. Stir occasionally to ensure even cooking. Continue until the potatoes are browned, which should take about 10-15 minutes.


3. Cover and Cook More - Reduce the heat to medium to low, and cover the skillet. Allow the mixture to cook until the potatoes are tender, approximately another 10 minutes.


4. Add Vegetables - Stir in the cut red onion and green pepper pieces. Continue cooking, uncovered, until the vegetables are crisply tender, which typically takes an additional 5-7 minutes.


5. Serve and Enjoy - Once everything is cooked through, serve hot and enjoy your flavorful skillet meal!
